- BLACKENED FISH
- Great with Corn Bread and Colesaw!

- 2 Pounds catfish or other medium-fat fish fillets
- 1/4 Cup paprika
- 2 Tsp. Salt
- 4 Tsp. Onion powder
- 4 Tsp. Garlic powder
- 5 Tsp. Cayenne
- 1 Tbls. White pepper
- 1 Tbls. Black pepper
- 2 Tsp. Thyme-crumbled
- 2 Tsp. Oregano-crumbled

- Mix above ingredients well.

- Heat oven to 450 degrees. If fillets are large, cut into 8 serving pieces. Place in ungreased rectangular baking dish, 11 X 7 X 1 1/2 inches.
- Sprinkle blackened fish ingredients over fish. Turn fish... sprinkle again.
- Bake uncovered 25 to 30 minutes (or until fish flakes easily with fork.)
